/ Trumfa from Camprodon valley
In Camprodon Valley, the trumfa or potato has been cultivated since antiquity and is the evolution of a subsistence economy. It is currently a complementary crop for valley farrmers and contributes to consolidate its economy. The main producers of Camprodon Valley, grouped together in the Molló Livestock Cooperative, work with a homogeneous and quality "Trumfa" from a crop that follows the production regulations agreed by all members and supervised by an official certification body (EICG).
In Camprodon Valley, climate conditions, the height and sun characteristics makes that "trumfas" grow slowly and they spend enough time under earth, accumulating nutrients and organoleptic features. Due to this we will find the taste of the dried fruit and smells of forest in every bite. The trumfa is a very nutritious, balanced food and rich in vitamin C. It consists of three parts of water and one solid. The calories we eat depend on the way we cook them and not on their nature.
In Camprodon Valley we grow Kennebec variety, which allows many culinary applications: boiled, mashed, creamed, fried or baked in the oven. It is very suitable as a companion in stews, because it costs more to undo itself. The "trumfo" potatos are sold in bags of 5.25 and 40 kilos, properly labeled.
