The Ripollès has a large expanse of meadows where sheep and lambs are raised and fattened in a semi-extensive way, which can be found in different establishments from territory. A group of shepherds from Ripollès have been associated in order to improve the trade and to be able to value their products, creating a brand of quality called certified. Among different races, it's worth mentioning ripollesa sheep, a native breed from northeastern region of Catalonia adapted to geoclimatic conditions of area. The productive system is usually characterized by herds of 100 to 800 sheep in semiextensive management, generally without reproductive planning and completing direct pasture with "fencs", cereal straw and concentrates. Ripollesa ewe has been characterized as a breed of moderate prolificity and low mortality of lambs.
The typical product solt by cattlemen of this breed is the Paschal lamb with a weight between 10-12kg. However, the recent initiative of suckling lamb ripolles (slaughtered at 20-40 days of age) is increasingly more established in the breed. To improvement and selection of race, as well as to enhance the conservation, the national association of ripollesa sheep breeders (ANCRI) was created.
